The Only Cake or Casserole Pan I'll Ever Buy from Now On - Lightweight, Non-staining, Great Results
I bought this pan because 1) I'm clumsy and have broken glass bakeware in the past, 2) It has a raised lid, giving a little more room and flexibility, 3) I've had good experiences with other Nordic Ware products.
It has not disappointed. I'll make Pros & Cons list to keep things simple.
PROS:
1) The pan is super lightweight. Really, really incredibly light. Being a huge ex-football player that doesn't matter much to me, but it's nice anyway.
2) Food has cooked evenly and consistently, and without fuss. Dark aluminum pans can require some temperature adjusting. This doesn't.
3) Food doesn't stick. Well, not anymore than with glass bakeware. It's never been a problem for me.
4) There's no nonstick coating to wear away.
5) The lid of the pan is raised. This is really convenient, as taller casseroles don't get compressed by the lid as sometimes happens with glass bakeware. It's good for decorated cakes as well. But for me, the biggest advantage is that I used these to hold and transport cookies to work, my wife's classes, etc. The raised lid is a surprising but major advantage of this pan.
6) It doesn't stain. I've cooked lasagna and other super-staining meals in this pan, and it's cleaned with no effort at all to the original silver color.
7) The pan is a few centimeters taller than many of its competitors, adding even more height and the resulting flexibility.
CONS:
1) It scratches. But who cares? And at least it doesn't have a coating that scratches away, meaning performance stays the same.
2) Using metal serving utensils can make a weird kind of scraping feeling that occasionally gives me the shutters. Like some people get with nails on a chalkboard. My wife thinks I'm crazy - it doesn't bother her. Probably barely worth mentioning but...well, there you go.
Overall: If I buy more bakeware in the future, I will buy this pan over and over again.
