Surprisingly good!
So... reading the single one-star review available when I purchased these, I was quite dubious, but I've been on my low-carb pasta hunt for quite some time and want to try everything I can. So I bought it. I'm *really* glad I did. Here are the not-so-gory details: In the package: The big bag of spaghetti has two smaller bags inside it, and each of those has two more even smaller bags inside them. So all in all, there are four equal-sized, 7 oz., separately-packaged bags of noodles. One of these strikes me as a perfectly reasonable serving of noodles. Each bag is about 9 oz before you drain them, so you're actually getting 7 oz of noodles. They're ready to eat right out of the package, more or less, but I like my noodles warm, so I followed the directions on the package to microwave them, which went fine. The specifics on how I tried them: First, I had them with my SO's spaghetti sauce, which I hadn't had in a year (because it's *loaded* with carbs, and by the time you add pasta... it's just out my reach, carb-wise.) With the sauce, they were great, but to be fair, her sauce is amazing, and it outright dominated the dish. But that's okay, because I get to have her sauce again in a noodle-y context. In moderation. :) Second, I gave the noodles the "acid test" which (as you see in the photo) was to treat them like buttered pasta. Take them out of the package, drain them, rinse them, let them drain again *thoroughly*, maybe even pat them dry with a paper towel. Then microwave them for 2-3 minutes, depending on just how hot you want them and your microwave's wattage. Then apply room-temperature butter (so it will melt quickly without chilling the pasta, cold butter on pasta is a poor way to go, trust me), garlic salt, pepper, and parmesan to taste. You could add more, too, if you're a fan of parsley, hot peppers, etc. At this point, you have a dish of 0-cal, 0-net-carb, 0-fat, 0-protein noodles where you really only have to account for the butter and parmesan. Which, carb-wise, isn't much. And... yes, it was really *very* good. I was so happy, I can't describe it without sounding a little nutty, because it's been a very long time since I enjoyed a dish like this. Anyway, yum! Was it perfect? No... after all, it's not wheat pasta and that's the ultimate benchmark, but I found it amazingly and satisfactorily close in a buttered pasta role. There's a little bit of lime flavor which I could do without, but that's pretty minor, or at least, once it's drowned in butter, garlic salt, parmesan and pepper, it is. My guess (and I emphasize that this is a *guess*) is that the lime is in there either as something to preserve the noodles, or perhaps as some kind of antagonist for the yam flavor. Nope, couldn't taste anything even remotely similar to yams, either. Texture: I'd say it's just a little chewy, pretty strong on the "al dente" side of the pasta scale, but again, no problem for me. I'm delighted. Will be buying more, and I'm happy to share my experience here. Particularly in light of that intimidating first review. It's definitely worth a try if you're craving low-carb (0-net-carb!) (0-gluten, 0 cal, 0 fat, etc.) pasta. By the way, if you check my other reviews, you'll see I'm not in the least reluctant to call a bad product out. This is *definitely* not a bad product. Kudos to the makers.
