I have thought for a year that I am gluten intolerant and eaten accordingly. Now, having done some more reading, I have come to suspect that I am instead having an adverse reaction to contamination of American flour by the Roundup herbicide that is applied to American wheat in its final days before harvest, by American farmers. Roundup, from our friends at Monsanto, is not permitted for use in the EU as it is here in the U.S. I ordered Jovial Einkorn Flour, which, being from Italy, is not contaminated with Roundup, and used it to make a pie crust and a bread recipe and then ate the results - NO REACTION, I FELT FINE - MAJOR PARADIGM SHIFT. Now, when eating away from home in America, I still must eat gluten free. But when I am at home, I can use the Einkorn flour in EVERYTHING, and eat with freedom and confidence. Thanks Jovial and Amazon, for restoring a major pleasure to my life! Yeah, it works a little different than King Arthur or Gold Medal, less gluten, etc., but BFD, you'll figure it out quick enough. I am a customer for life. Literally, my life! It's a hell of a world where you have to import a product from half way 'round the globe to get food that is clean enough to eat, but that's the one in which we live.
