Just do it
This flour is A-M-A-Z-I-N-G! Amazing! I originally became interested in Einkorn wheat after reading the book Wheat Belly. The book outlines how wheat has been hybridized into frankewheat which is nothing like the original wheat our ancestors ate. I normally eschew grains and wheat in particular, but there are some favorite recipes you just can't make without flour. After reading that Einkorn does not spike blood sugar or might be less allergenic, I was skeptical but hopeful. I haven't made bread with it yet, but plan to soon. I have used the flour in gravy and breading meat. It makes a wonderful, golden crispy crust in breading and blends smoothly and thickens even better than regular flour in gravy and sauces. The texture is incredibly silky and finely milled. But the biggest surprise of all is that it actually has a flavor, where regular flour has none or tastes like paste. In creating sauces, you normally have to cook the flour to get the paste taste out, but Einkorn has a subtle, rich flavor that doesn't require this, a sign of a quality ingredient. I originally bought this flour for its healthful properties, but I'm going to keep cooking with it because I love how it works and tastes! Do not hesitate to add this to your pantry.
