I may not go back to using AP flour in any of my cookies again.
Every year during the holiday season I make cookies for family, friend, and various parties. With the growing population of people who are gluten intolerant I decided to attempt making some of my most popular recipies GF so that no-one was restricted from enjoying the cookies. I had tried several "make your own" blends of GF flour and none of them worked well in making a cookie with the same flavor or texture as my AP flour versions. So I was a little skeptical when I bought this, hoping that it would be the magic blend of GF flour for which I had been searching. I was not let down. My GF cookies came out perfect in both taste and texture. So much so that the cookies made with AP flour were all that were left at the end of our holiday parties. Personally speaking I liked the GF cookies as much as our guest and am seriously considering making all of my cookies with this flour blend. It made me so happy to be able to continue to share my holiday tradition with all of our guest, family, and friends.
Per some of the other reciews here I added 1/4 tsp xanthan gum per cup of flour in the recipe. I also "fluffed" the flour up with a whisk before measuring. (Regardless of the flour, GF or AP, it's alway good to loosen/whisk the flour before measuring as it keeps from over-packing the measuring cup and creating dense, hard cookies)
