I saw a lot of variation in the comments regarding the correct ratio of mix to liquid, but I didn't see that anyone had done the math, so here goes. My recipe is at the bottom if you don't want to see my work ;-) Manufacturer's ratio is 2 gallons water (32 Cups) to 1 bag of mix According to nutritional info on bag: 1T mix weighs 12g 1 C = 16 T. 16T x12g = 192g of mix per cup (I used a scale to check this, and this is pretty accurate if you scoop into measuring cup. Don't spoon like you would if measuring flour) Bag weighs 2720g (2.72kg). 2720÷192 = approx 14.17 cups per bag ---SO--- FULL BAG 32 CUP water to 14.17 CUP mix -or- 2.25 CUP water to 1 CUP (192g) mix (32 CUP water ÷ 14.17 mix) -or- FOR 1-1/2 QT 3.38 CUP water to 1-1/2 CUP (288g) mix ((2.25 water x 1.5) to (1 CUP water x 1.5)) I round to 3-1/4 liquid. I use part evaporated milk and part water. ---------------------------------------------------------------------------------------------------------------------- TL;DR For 1-1/2 quart my recipe is: 1-1/2 CUP scoop of mix (288g) 1-3/4 CUP water (1) 12oz can (1-1/2 C) of evaporated milk Stir until combined. Makes around 4 CUPS of ice cream liquid mix. Refrigerate for two hours before use for maximum creaminess. Process in soft serve machine for approximately 20 minutes. The resulting ice cream is smooth, creamy, and delicious. Plenty sweet with a pleasant vanilla flavor. Not icy or grainy at all and just as good, if not better, than anything I've had at Dairy Queen. I haven't tried using all water yet - when I do I'll report back. I have a 1-1/2qt Cuisinart ICE-45 Mix It In model, and this is the perfect amount to make a full batch. If I want less servings, I use 2 CUPS of the batch and leave the remaining mixture in a jar in the fridge for the next night. I hope that someone will find this useful!
