I purchased this to replace my starter that went off after storing for 6 months without feedings and needed to be replaced. This version has a much sweeter taste than the dried version by Breadtopia. Also, it was ready to bake with after only 48 hours of feeding. If you want to start sourdough right away, this is an excellent choice. I am very, very happy with my first bakes with this. My only concern is that it seems susceptible to that orange bacterial infection, do definitely keep a backup of some fed discards in the freezer. (Instead of throwing out your discard, separate it and feed it as if making another culture. Then, straight to the freezer as a backup. I like to keep several backups.) Lastly, if you want a very sour flavor, keep your starter wetter / more hydrated (like thin pancake batter), or replace 10-20% of the flour in your recipe with whole rye flour, as this will give it a very sour SF-style flavor. Recommended!
