I was introduced to this olive oil and others like it by a former neighbor who was from the Middle East. She explained to me that olive oil from places like Morocco and Lebanon are not as "olive-y" as Italian or Greek olive oil. They have no bite to them and they have a floral or fruity aspect which is very pleasant in salads and as a dip component. Although I have nothing against Italian or Greek olive oil, I find myself gravitating toward these softer flavors. Give it a try, I don't think you'll be sorry.
