My first job many moons ago was as a barista at the café in a Borders Books and Music. I didn't like coffee when I first started there, so chai was my go to for caffeine. We used a powdered mix at Borders, and after the company went bankrupt, I lamented the loss of my favorite chai. Other pre-made mixes like Oregon Chai liquid, while tasty, didn't have the same flavor that I loved and remembered from Borders. Many years later, my husband and I happened across an independent coffee shop that served Big Train Chai. He ordered a chai latte, and it may sound funny, but I could immediately smell that it was the same mix we had served at Borders all those years ago. Since then, I've ordered the mix for myself and given it as gifts to my friends and family who also miss it from our cafe days. The vanilla chai is the flavor that I remember, and although the others are also good, I always come back to vanilla. Is it gourmet tea freshly brewed with exotic herbs and spices? Definitely not. It's the Swiss Miss of chai. However, it is sweet, comforting, and delicious, especially if you have fond memories of bookstore coffee shops in the late 90's.
