Easy and foolproof way to make great poached eggs.
I love poached eggs, and this is so ridiculously easy to use (and clean) The instructions that come with the pan are a bit vague, so here's what works for me. They suggest using spray cooking oil in the cups, but I prefer a few drops of herb-infused olive oil. Bring 1/2 inch water in the pan to a boil and reduce to simmer (I use a gas stove). Crack in cold eggs. Cover and simmer for 4 minutes for fully cooked whites and fully runny yolks (the way I like them - go longer if you prefer less runny). Don't touch the cups with your bare fingers, lift them out with a glove or tool. Slide a knife around the edge to loosen and tip over where you want it. I'm finding myself making poached eggs as a great topping to add on a variety of dishes. My latest is poached eggs on top of roasted shredded brussels sprouts, onions and poblano peppers.
