I take them with me to my favorite Vietnamese restaurant and order Pho without noodles
To make them soft you need to first rinse them to wash of the packing water. Then immerse them in hot water. Squeeze the juice of one lemon and add about a teaspoon of sea salt. Stir the mixture and let sit for 30 minutes. Rinse with cold water to wash off the lemon and salt. The noodles should be soft. You can use immediately or store in a ziplock baggie. They will absorb the flavor and color of whatever sauce or broth you put them in.
I take them with me to my favorite Vietnamese restaurant and order Pho without noodles. I put the kelp noodles in and enjoy! Extremely low carb and makes Pho into a really Keto friendly dish.
