First time use, saved my Shun Knife
Cooks Illustrated just did a review of knife sharpeners and this model came out tops. I've never owned an electric knife sharpener before but based on Cooks, who's never steered me wrong, and due to one very expensive Ken Onion Shun chef's knife that was damaged, I decided to give this unit a try. I read the excellent instructions and set forth to attempt a repair this fine and expensive knife. I took pictures before, during and after with a Macro lens as this tells the story. So please examine the four images. The first is obviously the knife with the severe nicks. I ran the knife through #1 slot about 10 times. A few pulls were not well conducted on my part as I was getting the feel of the unit and process. But it looked like I got most of the damage honed out. After viewing the photo from the Macro, I decided to give the knife 3-4 more pulls and you can see the results in the 3rd image. Nicks gone. The last photo is after running the knife through slot 2 and 3 about 6 times. The knife feels VERY sharp and of course, I think I totally removed the damage. I'm impressed but I have many more knife's to work on but none with any real damage. I hope to go over to my Neighbor's house and sharpen her dull knifes which are not Japanese but put a nice 15 degree edge on them.
