This SCOBY arrived on time and in great shape. It sat in the fridge for a few days (oops) until I had time to brew my kombucha tea. I made a one-gallon batch, put it in a large crock, and added the SCOBY. Ten days later, I had some good kombucha! Since then, this SCOBY grows like crazy; it usually covers the entire top of the liquid in my 2-gallon crock. I have to trim it down at least once a month or it starts to grow out of the top of the crock! Due to the size and strength of the SCOBY, and the fact that I keep the crock next to the fridge (which generates some warmth), my brew is normally done in 5-6 days now. I make 6 quarts at a time. When combined with the two pints or so of starter tea that I leave in the crock each time, the end results are just perfect for filling 12-14 flip-top bottles. I'm really happy with this SCOBY and recommend it to anyone who wants to get started making kombucha. Also, the Amazon price for this SCOBY, along with a 2-gallon crock and some flip-top bottles, was WAAAAYYY less than those kombucha starter kits that are advertised on some websites. Do yourself a favor: make your own "kit" from Amazon and save yourself some $$$.
