First off let me say I'm a bit of a vanilla hoarder, and a vanilla person. at any given time I have an assortment of different beans, pastes, and extracts in my spice cabinet. I'm not a professional or a connoisseur, but I enjoy testing/sampling vanillas in various baked/cooked goods. This paste is my favorite vanilla paste. I love it. I didn't want to, because it's more expensive than the Nielsen Massey one I buy (when compared to the price of a local store I buy it from). But it has a better flavor, without a doubt. It's a more delicate and complex flavor- different than your standard super market vanilla. The fleckage is good as well. I will probably continue to buy it and reserve for more predominantly vanilla things I make (i.e. ice creams and frosting etc). And use the cheaper stuff for cookies and such.
