Wow. Canned meat!
Always wanted a pressure canner... just got around to it. It's really neat, and easy too!
Canning review revisited... Ok. I got this guy in November. It is now May. I've used it quite a bit and can say that I love it! My freezer loves it, too because now I have more space in it. I am canning jars of chicken stock and not using up freezer space! I am canning jars of leftovers! My neighbors hate it, though, because when I make a big batch of something, I can the leftovers instead of giving them away. Now I have all my soups anytime I want them. Hello, Albondigas, Minestrone, Beef and Barley, Chili, Creamy Tomato, to say nothing of GUMBO!! I can keep it and not have to give it away!
Also, before I bought this canner, I was reading the reviews (thank you, everyone for your reviews) and people were saying they were having a problem getting the lid to seat correctly or they weren't able to get pressure. I've never experience that problem and I think I know why. Every third time I use my canner, I take a Q-Tip dipped in olive oil and run it around the beveled part about 1/2" from the top of the pot. And I do that faithfully. Another thing I do that I think is the reason I'm always successful is when I first put the lid on, right after I slide it to lock in place, I make sure that it's on evenly all the way around. If it's not, I adjust it bit by bit until it's on straight. THEN when I am tightening down the latches, I give one a twirl, then the one directly across from it, then the one next to it, then the one directly across from it and so on until they're all on tight. And I check to make sure the lid is still on straight. No failures!
