I use this particular brand of almond flour because I've achieved the best results for french macarons using it. The super fine texture saves me some time when I sift and process the dry ingredients for a smooth macaron finish. You know when the baker uses sub-par almond flour or hasn't ground up the flour into a fine enough texture when the texture of your macs are grainy and sandy. With this flour, I haven't had that problem. I wish this particular brand and super fine texture was available ALL THE TIME! If you are trying to make macs or anything that requires a smooth and non grainy texture, I would recommend this super fine almond flour.
