You have to add the valve or you will destroy anything you put on this grill. I could not get the temp below 450* even at the lowest setting. I even called Char Broil and they admit this is a problem and suggested I only cook hamburgers on this grill. Ridiculous. Not an acceptable answer. I did a bunch of reading as I was considering another grill altogether. The I read the review from Ritchie Bauer. I bought the control valve and then had to get 2 brass adapters at a Napa Car parts store. Altogether less than $20.00. I can now easily turn the grill heat down for steaks and Chicken. You will need to use some thread sealer and do the soapy water test for leaks. Very very simple stuff. The new valve is available here on Amazon and it came quick!! It is intended for use in propane grills so you don't have to worry about this being some questionable fix. Sadly, a lot of the other smaller grills have the same issue with being to hot. I like the potability and the infra red features on this grill = very much worth the fix.
