Best on the market; stash it in the freezer
I bought the 2-pound package for $10.34. If you do the math, I think you'll find that this buy is a steal compared to the price at grocery stores and other Internet outlets. It's the best yeast on the market. If you think you can use this much of it in the next few years (OR give some away in a pretty glass jar: fabulous gift!), just take out a small amount, put it in a glass jar with a lid, and store that in your refrigerator. Put the rest of the package in a Zip-lock bag or empty it into a large glass container, and put it in your freezer. When you're taking yeast out of your refrigerator or freezer, you MUST let the yeast come to room temperature before adding to the other ingredients. In fact, if you're making yeast-leavened bread, ALL your ingredients will do better at room temperature. I keep my flour in the freezer because I make biscuits a bit, and very cold ingredients work best with that. But for yeast bread, no dice: I take everything out and let it sit awhile. I've been baking bread since the early 1970s. I always use Red Star if it is available. With 2 pounds of it in the freezer, it will be available for a very long time.
