Solid performance with a few caveats
Let me start by saying that I own an Instant Pot, so I will compare the two. The Crock-Pot version operates well and if I didn't own the Instant Pot, it would seem perfectly fine. The biggest advantage is that it seems to come to pressure much more quickly. It cooks perfectly silently with no sputtering or hissing of steam. It also has a non-stick cook pot, which is a mixed blessing. It's nice that clean up is easy, but it does not develop as much fond in the pot when browning, which adds to flavor of the dishes. The biggest feature difference, which I enjoy on the Instant Pot, is the ability to override the automatic settings completely. Instant Pot allows you to cook on a manual setting and also allows you to increase the temperature for functions like saute/browning. The Crock Pot relies exclusively on the preset buttons, but allows you to increase or decrease the time. One glitch or issue was with the poultry setting. The recipe I was following instructed a 12 minute cook time. The preset for poultry came up at 15 minutes and I was unable to decrease the time though I could increase. I wondered if that was to safeguard against under-cooking poultry, or does my pot have a defect? All the other settings allow for a decrease & increase in cooking time. Overall a good appliance and a great time saver. I made a Mississipi pot roast that came out beautifully with 45 minute cooking time and General Tso's Chicken both from Amy + Jackie's website.
