I almost returned this pressure cooker before even trying it, because I got the impression it wouldn't keep up the pressure. I guess it just fluctuates a bit more than some other ones. Initially it goes up to 88 kPa (about 12.8 PSI) then slowly drops to 50 kPa (about 7.3 PSI), then back up to 88 again. But after trying it a few times, the food turns out great every time. I've tried a few recipes from Bob Warden's Great Food Fast and Slow Food Fast (excellent recipe books, try them with this pressure cooker), and the food was cooked perfectly every time. I also like the 8 qt size, very nice when you have teenage boys, you can trow in a few more fillers.The stainless steel pot is also nice, I cooked a roast for 85 minutes ("Perfected Pot Roast" from the first book above) and nothing stuck, very easy to clean up. My old pressure cooker's teflon coating started peeling after less than a year. Also, this cooker appears to not let any steam out. I have a little bounce in my kitchen floor, and my previous pressure cooker would "spit" steam at me every time I walked by, this one doesn't. And it looks and feels expensive, and built like a tank, highly recommended.
