I have been inspired by the recipes in Danny Trejo's cookbook, especially after watching a recent 2020 Bravo TV's "Top Chef in LA" where Danny Trejo was a judge. I recommend his cookbook to others who want to learn fine Tex-Mex cooking. However, BE AWARE that the cooking time in the recipe for Barbacoa Brisket is INCORRECT (page 76). At 325 degrees Farenheit, a 4 to 5 lb brisket should slowly braise covered for 3-4 hours, NOT 8 hours as indicated in the recipe. Only cook for 8 hours on the low setting in a slow cooker, not an oven. This is an editorial mistake and an expensive one if you make it. Cooking a brisket in the oven at 325 for 8 hours will result in a charred brick of shoe leather.
