There are a lot of testimonies that this doesn't produce quite as concentrated a brew as other options available: to that I simply must disagree. A lot of people might be placing this in a fridge immediately... DO NOT do this. Brew at room temperature for at least 12 hours first then move it to the fridge for however longer you wish to brew. Or remove the grinds and chill after the 12 hours. My cold brews using this method were every bit as concentrated as my previous manual method of dumping grinds directly into the water and spending a long time filtering it all when finished.
Some will also say you skirt the whole point of "cold" brew this way but honestly, I cannot tell a difference and in most cases find the coffee just a little bit better. I drink a lot of coffee and roast my own but obviously my tastes are not yours. Give it a shot. If you don't like it, brew it cold for longer and with more grinds if a heavy concentrate is what you're after.
Coffee is chemistry and also very personal. You have to figure it out (mostly) for yourself :)
