I often find most “chai masala” spice mixtures to be cloyingly sweet, and lacking authentic flavor. At a friends house I was offered a cup of chai and initially refused, but the aroma brought me in. I could smell the difference. This wasn’t your syrupy chai dribble. It was ginger forward. I apologized for my initial refusal and asked for a cup. It was love at first sip. This is the flavor of chai I had been missing. This tastes like the chai my mother’s friends would serve us on the terrace of their home in Pune. It was like taking a trip to India with each sip. I asked how they had made it, if they had crushed the ginger when they added their milk, and a slew of other questions. Their answer was showing me the cute little tin. I was surprised and happy to find I could order it on amazon. Now I am treating myself to chai that I Lomé whenever I so choose. It’s important to note that a LITTLE goes a long way. This masala is potent, and doesn’t need to be dumped in your pot. Be gracious to your tea and yourself, and you’ll be quite happy in the end!
