The Publisher's claim of heavily testing recipes seems suspect.
My jury is still out on this book and I am prepared to revise this review if I become more impressed. Soft boiled eggs, page 289, require 5 minutes at low pressure, not what this book recommends. Last night, I made General Tso's Chicken, page 113, and it was inedible as written. The sauce was much too strong. Upon researching the source of this recipe (AdventuresofaNurse.com) I discovered that many others had the same experience and the recipe was changed - on the blog, not in the book. 3/4 cup hoisin sauce is now 1/4 cup - quite a difference! The publishers claim, page 13, that all recipes were heavily tested cannot possibly be true. Tonight I shall give it one - and only one - more chance. The German Pork Roast, page 84, looks intriguing. Edited to add: I followed the instructions for the German Pot Roast exactly as written. My pork loin roast was exactly 2 lbs. After using the prescribed cooking times, the internal temperature of the roast was 141 degrees - not even rare! Every other recipe for pork roast I could find had a much longer under pressure time than this recipe suggests. After I cooked it longer, the flavors were delicious and the sauerkraut gave enough liquid to build pressure. At this point I would suspect incorrect information in every recipe! The publishers should consider a re-edit to support their miraculous claims!
