Great text, terrible photos
This is a big, beautiful book filled with super helpful, interesting advice like all Cooks Illustrated materials. However, the photos are all sepia-colored. You can hardly make out what the picture is. Is that chicken breast or a sponge or what? And they use these photos to illustrate the text. Notice the difference in how the chicken breast cooked with one method differs from the chicken cooked with another method, the text reads, but you can't tell anything from the photo. It is just an unappetizing, unnatural sepia color. This is so ugly and annoying that I cannot recommend the book. Wait until they put out another similar book and use true-to-life color photos.
