I used to respect America's Test Kitchen
Under Christopher Kimbal the America's Test Kitchen really thrived. The books they produced were amazing. This book is mediocre at best.
The start of each section has picture of one of the "course instructors" in a half page blue box of text. The same picture that appears early in the book of each instructor in the front matter of the book.
The old books, when they were still good, had large sections that talked about why recipes worked, how they might go wrong, and how to fix them if they did. This book has a few sparse sections on the science of it. There doesn't really seem to be any part of the book that is actually sets itself apart from other cookbooks to make this into a cooking school cookbook as it claims to be.
I'm completely underwhelmed by this book. It gets two stars though, because it does have a good collection of simple yet boring recipes that rehash all the well known American food and Americanized versions of foreign food.
