So disappointed
After reading the rave reviews of Flour Water Salt Yeast, I purchased the book. What a big disappointment it is. There are very few recipes, loads of photos, lots of detail but his method of making levain is just too much. Over 5 days it takes 2500 grams of flour, throwing out 3/4 of the mixture daily, then you need to feed the levain daily if you want to keep it active. This amounts to over 10 1/2cups of flour! Interesting that my exact same dough bucket weighs much less than his. I did try the Walnut Bread with some success using my starter but threw out the Pain De Campagne using the author's starter before it even got to the shaping stage. What a huge waste of flour. While I am certainly not a professional baker, I have been baking bread for 50 years with good results, especially using my own starter made with pineapple juice and a small amount of whole wheat flour. If anyone wants my copy they are welcome to it.
