I don't think this is Aceto Balsamico Tradizionale, or even balsamic vinegar of Modena...
I was attracted to this by the price and number of positive reviews. I clicked around a bit, and a couple things struck me as odd, but I purchased anyway. It isn't awful. Better than a $5-10 bottle of balsamic vinegar at the supermarket. But, this isn't Traditional balsamic vinegar (Aceto Balsamico Tradizionale). No way. This company also claims to be D.O.P. certified, but the stamp is not on the bottle. The big tell is the taste. Strong vinegar note and flavor profile very different from the type of balsamic it claims to be. Nothing like a traditional or even a good Modena balsamic. When I looked at the ingredients, to see if it's primarily grape must or wine vinegar, the ingredient is listed as "balsamic vinegar". Is that even allowed, in general? Certainly it is against DOP and IGP certification standards. So again, no way it could be certified as traditional or modena balsamic. Seems like something fishy is going on here. I could be wrong. I welcome a response from the manufacturer, and a response to all of the other critiques claiming the same thing. I'm happy to revise my review, then. *Seems* like people bought the marketing, and liked it because it tasted better than the typical $5 bottle of balsamic.
