very disappointed...needed to replace my old fry pan. bought this one based on the amount of stars & wanted to try the ceramic coating. not a fan of glass lids, but thought I could learn to live with it. First try was eye of round steak, which I usually do on a slow simmer with zucchini, yellow squash, onions, celery, and stewed tomatoes. there are hot spots--the end of the pan nearest the plug browned the meat quickly, but the middle & opposite end did not brown at all. Once I had all the meat browned, I placed the vegs over top, added a small can of tomato juice, put the lid on, & set temp to a slow simmer, or so I thought. It rapidly came to a full boil, so notched the temp. down again--and again--and again, until I got it to the simmer I wanted. That's when I noticed the hot & cold cycling---would simmer for a short while, then everything came to a stop for a long while, & back to a simmer. The set temp. by this time was hovering in the 200 range, so this pan definitely runs hotter than what the dial says. There is a steam vent in the lid, but it's wide open--no way to shut it, so most of the liquids evaporated before the cooking time was up--had to add more. & as I was taking the meal out of the pan to serve--the meat was beautiful on the top, but close to burnt on the bottom! at 200 degrees! I've been making this meal for over 50 years---have never had to babysit it like I did with this pan! Today I tried bacon--same story. the 2 slices nearest the plug end browned nicely--other end raw. Took forever to fry 1 1/2 lbs. The only thing I can say good about this pan---I liked the ceramic . Clean up was easy, but the rest of the performance of this pan is NOT worth the hassle or the money. oh--another thing--the glass lid has a metal rim around it. It's pretty flimsy & I can see where it might be a problem sooner than you would wish. I am returning this pan---not giving it a third try.
