Disappointing, inferior to old model with the same number.
This product is inferior to what used to be sold as the same model number. I bought my first one in 2011. Recently while I was on vacation, my house sitter misplaced these. So I re-ordered the same model number. They are decidedly inferior - where they used to be exceptionally good, they are now pedestrian. I just found the old one and can show comparison photos. The old one has a better made blade, and a notch which can be useful for beginning cuts. The blade itself is MUCH better - can cut through much thicker bone and rawhide.
I use these for two main purposes: cutting poultry and cutting dog rawhides. Both are difficult to impossible with the new model. The rawhides make an easy side by side comparison. These can barely cut the thinnest ones. The old ones had no problem cutting through medium thickness ones. These are almost useless for my most common uses. They are not good for cutting through breastbone or backbone, and if I have to use a butcher's knife - what's the point of these?
