This review is for the Kindle version only. The Food Lab is an exceptional book, and I would rather have the Kindle version for portability. I would rate the print book 5 stars. However, the book's index on the Kindle is nonfunctioning, rendering the book nearly unusable. A 960 page complex reference book requires an index. Searching for specific terms is not a workable solution, since the results returned are not focused. I also think that the table of contents is quite inadequate. It links to individual chapters that each have their own tables of contents, but for recipes only. Thus, trying to find information about a specific ingredient or technique on the Kindle is almost impossible.As a scientist and an advanced home cook with an engineering approach, I really wanted to explore this book in depth. I've returned the Kindle version for a refund, and will get the printed book and use the Serious Eats web site.
