Disappointing Cookbook for real vegans
I have the regular cookbook from Americas Test Kitchen, and use it quite a bit. Thought as I go vegan this would be useful. They missed the boat on these recipes quite often. So many of them call for fake dairy products - fake cheese, fake sour cream. Have you tasted these products? I find them very lacking, and am just cutting the idea of cheese out of my diet rather than use processed products that are nutritionally vacant and taste similar to bad processed cheese food ( a.k.a. mostly oils and flavorings, not nutritionally good ingredients). They often call various vegetable dishes "steaks", e.g. "Cauliflower Steaks", and address dishes as substitutes for a meat version (e.g. "Orange Chicken"). They don't get that people interested in their diet enough to go vegan don't want to eat bad food, or aren't looking for simulated meat dishes. I think they want good food that serves them nutritionally. Polenta fries with fake sour cream Chipoltle sauce is a junk food high in carbs, with very little protein or vitamins. So, no, this cookbook is a loser in my book. They really didn't do their homework.
