This unit is incredibly flimsy and cheap feeling. I'm not a strong person, but I could easily bend this pan in half with my hands. Despite that, I hand-washed it and test cooked an omelet with it today, and another in a normal non-stick frying pan; the omelet in the Copper Chef came out leopard-spotted and tasting slightly metallic. The one in the normal frying pan was good as expected, no metal taste. The metal taste is concerning, and is my main reason to send it back (which I will). Other concerns have to do with what features are advertised on the package vs. the warnings that you read in the instruction booklet. The box says "withstands heat up to 850F" - but the booklet (after admonishing you to heed all warnings), says to use it on "low to medium heat" only. This would make others' comments make sense, in that several folks reported that repeated high temperature use causes the coating to flake off. More, the box says "dishwasher safe" - yet the pan is clearly made of aluminum, and the instructions recommend washing with hand soap and warm water, and if you must use a dishwasher, avoid detergent with lemon in it. If you want to see something interesting, try washing a disposable aluminum roast pan in the dishwasher - comes out "tarnished." I'm not about to try with the Copper Chef. Last, it says to avoid using extra virgin olive oil, because the oil supposedly will bond to the non-stick surface (!) and form a coating that will not come off. Hah! No other pan has this "feature," so I wonder why this one is so picky? Anyhow, this is an overpriced/overhyped piece of junk with more care and handling precautions than an average newborn baby.
