Beware!! Not As Good For Keto As Advertised!!
I really liked this product as my post-dinner dessert, but then I realized it has an ingredient that leads to a VERY misleading Net Carb count! This product contains Isomaltooligosaccharide, also known as IMO (see picture for evidence). This is NOT a true pure fiber and the body treats this "fiber" like it is a carbohydrate! The glycemic index of IMO is very low, however, it has been shown to be nearly completely digested (83 % or more) by enzymes on the small intestinal border. Thus, IMOs should not be classified as a true fiber but rather as a low glycemic carbohydrate like steel cut oatmeal. IMOs should be viewed as a very low glycemic carbohydrate source, much like steel cut oats. In essence, if you see a low-carb snack that has 20 grams of IMO fiber, approximately 16 grams (80%) of this fiber will act as a slow-digesting carb, and four grams will act as an indigestible fiber. HighKey is counting this IMO as a fiber and subtracting it from the Total Carb count, leading to an inaccurate Net Carb count. HighKey claims 2 grams of Net Carbs per serving, but in reality it contains 6 grams of net carbs per serving. The 4 gram difference might not seem like a large, but for those on STRICT Keto it is a big deal!! It's even a bigger deal if you make a batch that is less than 12 small brownies!
