Lack of Truth in Advertising
I was intrigued by the positive reviews and the design of the handle, which seemed to mirror a Cutco design. The blade arrived today, and I am sending it back quickly for a refund.
PROS
1. It is a sharp knife out of the box that does appear to be VG 10 core steel as advertised.
2. The spine does taper appropriately to the point of the blade and the required thinness of the knife is designed well.
3. The knife does LOOK attractive.
CONS
1. This is NOT Damascus steel. This pattern on the blade was probably stamped or etched on. There is a difference between a Damascus pattern and Damascus steel.
2. HANDLE HANDLE HANDLE HANDLE
Whoever submitted these dimensions to Amazon is not honest at worst or REALLY stretching the truth at best. Look at the picture I have attached. The choil (where the tape measure starts) is where your index finger will curve around the handle and hold it. The handle measures 100 mm (according to the specs) from the TOP of the guard to the pommel (heel) of the knife. In reality, from the choil to the pommel, which is where your hand is gripping the knife according to its design, is more like 3.5 inches or 89 mm. That may not sound like a lot, but when you have just average sized hands, you have about half an inch of your palm off the the knife. This prevents you from getting the proper leverage required for consistent cutting, speed, and control of a good utility knife. A utility knife is SUPPOSED to be able to be used to not only take care of large stem vegetables, but also work with smaller proteins, shallots and onions, and be used to help trim of silver skin from a piece of beef or pork. Holding your knife with this handle would make that job very difficult.
This would be a great knife if you have TINY hands. I don't, so this is going back.
