a critique of the 1, 2 and 3 star reviews
After reading the 1, 2 and 3 star reviews, here's what I think. Soggy and unappetizing? Dude, you need to preheat it in the oven BEFORE you put the pizza on it. Doesn't work well as a stovetop griddle? Dude, the scientific differences between baking and grilling means grills have to be thick and heavy. If you want a stovetop griddle, buy a stovetop griddle. Please don't pretend a thin cast iron baking pan is also a griddle. Not pre-seasoned and is bumpy unlike grandma's old Wagners? First, you can't buy anything in cast iron today that has the quality of the old Wagners and Griswolds. Second, along with the better cashting, your grandma made those pans smooth with years of TLC. Factory preseasoning means poorly, or almost, seasoned. If you have to scrub food off cast iron, it isn't seasoned. Please use Google to learn how to properly season cast iron. Cleanup is time consuming because you can't use soap? If properly seasoned and used oven hot, cleanup consists of a quick wipe with a paper towel and a light spray of fresh oil. Difficult to clean and rusts easily? Stop being OCD and season it like you're supposed to so you can easily clean it. Rust? What the heck? In your quest to make it "clean" it sounds like you scrubbed off all the seasoning (i.e. grease and oil). Doesn't work well as a griddle on a glasstop oven? First, it's not a griddle, and secondly, glass tops don't work well with cast iron (p.s. only an idiot uses cast iron on a glass top stop because the glass top is, well, glass! Think rock, paper, scissors). I give cooking pizza with cast iron five stars, if you now how to use it.
