Disappointing
Having cooked from a number of Madhur Jaffrey's cookbooks, I had high hopes for this one. For the first time ever, she's let me down. I doubt I will be referring to this cookbook very much at all, as the number of recipes is relatively modest and the choice of recipes is for the most part restricted to what you'd find in any Indian restaurant in the US that caters to a non-Indian clientele. For example, the entire list of recipes in the Grains chapter is limited to:
Plain basmati rice
Plain jasmine rice
Plain brown or red basmati rice
Basmati rice pilaf with peas
Basmati rice pilaf with whole garam masala and dill
Saffron rice with golden raisins
Lamb pilaf
Quinoa with tomatoes (!!!)
The chapter on vegetables has one recipe each for beets, green beans, carrots and peas, eggplant, cauliflower, kale, mushrooms and two potato recipes. There's not even one recipe for okra.
People with some experience using their Instant Pot would be better off starting with Jaffrey's seminal An Invitation to Indian Cooking or her recent, larger, and much broader Vegetarian India: A Journey Through the Best of Indian Home Cooking and adjusting the recipes accordingly.
