I've cooked on iron griddles many times and was looking forward to getting a great one of my own based on all the positive reviews. However I was sorely disappointed by the heat distribution of the griddle. Cooking pancakes, the upper half could be burned and the bottom half barely cooked, while the pancakes in the center took twice as long to cook. In disbelief that even my s***ty 3/16in thick steel griddles could have better heat distribution I broke out my infrared temperature sensor. What I saw was a massive disparity in heat across the surface of the griddle. On average the highest and lowest temperatures across my griddle varied by 100 degrees Fahrenheit (see customer images for a heat map and explanation). This is almost unimaginably pathetic performance. Even my father, a professor in thermodynamic physics, could not offer an explanation as to how s***ty a piece of iron this is. In short, it doesn't cook evenly at all and the nonstick capabilities leave something to be desired.
