The syrup is very good, but it apparently has a shelf life of 30-60 days once opened. This is not on the label but you can find on Monin's website. Ours had the pump attachment with cap always on, but it was growing a lot of mold that was floating on the top. The syrup is ruined. If you refrigerate it (which it does not specify to do so on the label) it will last longer.
