takes a lot of effort to produce a questionable cup
i've been brewing with a chemex for 5+ years, and about four months ago received this kone filter as a birthday gift. i was very excited about it and immediately started using it. it took me quite a few tries and lots of trial and error to brew an acceptable cup of coffee. as other reviews have mentioned, you need a very fine grind (not quite espresso but almost) and you need to pour your water very carefully, avoiding the sides and pouring very slowly. the thing is, at this point i feel like i am doing everything properly, and i am still not satisfied with the result. it seems that no matter how careful i am with the process, the coffee is "oily" and there is always some kind of sediment (which i really dislike!). this morning i brewed one cup with the kone, drank it, and then brewed a second cup with a standard chemex paper filter (switching the grind to medium). not only do i prefer the coffee brewed with the standard filter over the coffee brewed with the kone, but it also surprised me how much more i enjoyed the experience of brewing with the paper filter. no stress, no fuss... made me realize that brewing with the kone is kinda stressful! ha. feels weird to write that, but it is true! it is a high maintenance product. SO, there is no doubt that the kone filter is a well made product, and you can definitely use it to brew a tasty cup of coffee. but for me, i will be using the standard paper filters going forward... it's easier, more fun, and i prefer the result! final note: some reviews mention how the kone is better for the environment... well, i am not sure about that. it is super annoying to clean the kone and it takes a lot of water to rinse out all the grinds. compare that to tossing the chemex filter in the compost. i am no environmental expert but it seems to be that composting the grounds/filter would be better for the environment than wasting all the water.
