NOT pure vinegar! Contains other mystery chemicals!
I have been a chemical engineer for 25 years. I frequently prepare my own chemical demonstrations at home for friends and family. I purchased this vinegar as a source of acetic acid to produce copper (II) acetate from basic copper carbonate. I understand this chemistry very well and have performed this reaction many times successfully with household vinegar. Based upon the results with this vinegar I have concluded that it contains some mystery chemical that is not disclosed. When adding the concentrated vinegar to pure, distilled water, it immediately formed a cloudy emulsion, indicating the likely presence of an organic phase that is insoluble at higher pH (see photos of water, water + vinegar mix). Pure vinegar does not behave this way at any concentration. Before mixing, it did have a strong vinegar smell. But after dilution (about 50mL added to 400 mL, 1:8), it no longer had much vinegar smell, but instead had a strong chemical solvent smell that I would describe as a mixture of cough drops and gasoline or nail polish remover. I added some purified basic copper carbonate to the diluted vinegar to produce copper (II) acetate. It should have produced a clear blue liquid that evaporates to produce sparkling blue-green crystals that can be easily rinsed away with water. But instead, this vinegar produced a suspension of dark blue-green slime that clung to metal, glass, plastic, and skin. After settling, the emulsion formed oily blobs floating on the surface. The smell did not change after reaction with the copper carbonate, as pure vinegar should have. I don't have the ability at home to identify the mystery ingredients, all the ingredients, but there is enough physical evidence for me to conclude that it must contain other unknown organic chemicals.
