Great freshness, nightnare selection of the mix of pieces that made up my order.
I had no reservations buying this high priced Chilean Seabass from Whole Foods because, seriously, it was delivery by Whole Foods, and I thought I was saving time by ordering delivery since I was cooking for friends (entertaining).
Whomever picked the fish needs training on how to choose like cuts and sizes. It's not like I'm ordering Chuck to cut into stew meat. It's fish. The cuts should be of uniformed size and weight.
I don't expect it to be skinned, but this is the first time I have bought fish where the new scale were coming in so both the fully mature as well as the 1/2 emerged scales were on the fish. Not a good experience, because we cook and prepare fish to eat the skin as well as the meat.
The pieces I received in the order were of the right freshness and it was the right fish, and it did taste good.
However the order consisted of four pieces of varying sizes and shapes that varied from chunks 2x4 x2 inches to a small tail cut filet that was roughly a triangle of 5x6x5x1 inch at it's thickest. This is a nightmare when you're entertaining/cooking for friends trying to make everything cook and plate well, and you've paid a premium price.
Bottom line, the quality of the fish was as expected (peak freshness, accurate) but I would have insisted on uniformed pieces as well (no compromise on either) if I had been choosing at the store. And isn't that what I'm buying by ordering from Whole Foods? W
