After lots of research I finally gave in and bought the Vitamix 7500. When I first got it I tested it out and made a soup, ice cream and a smoothie successfully. Since the first day or so the Vitamix's primary/only task has been making my morning smoothie which my old Oster blender made just fine. The smoothie is simple, and the only frozen item in it is blueberries the Vitamix has been able to handle this as it should... The problem arises when I go to use it for anything else, for example today I tried throwing ingredients into the Vitamix for raw variation of a "chocolate flourless cake". The ingredients were simple but sticky, about two cups of soaked dates, cocoa powder, almond flour, honey etc. The blender could not handle this and after a horrible smell it shut itself off within 7-10 pulses on the lowest setting. The blender would not turn back on for at least 20 minutes and after the first or second pulse it shut itself off again. It seemed to be going into a fail safe mode to protect the motor. It will now still blend "easy" things but throw anything sticky or hard to blend in and it shuts itself off. I transferred the ingredients into my 10 year old Oster blender and it was able to do the job just fine. To me this is absolutely insane. How is a $530 dollar blender not able to do something a $50 10 year old blender can do? I am extremely disappointed and ticked off, the reason you buy this thing is because it is supposed to be more powerful and versatile than your other kitchen appliances. I think I'll stick with my old $50 Oster blender and my $25 black and decker food processor. If I could return this thing I would but I'm a week outside of amazons return policy. I guess it's going on craigslist. If the blender was $100 I would be willing to accept it's shortcomings, but to justify $530 I expected this thing to be able to handle a lot more. The price tag is absolutely absurd. Save your money.
