I love this kitchen tool! Since I purchased it, I've incorporated more tofu dishes into my diet because it's less of a hassle to prep versus a skillet w/cans overnight. How I use this: I usually keep my extra firm tofu in the freezer because it becomes more porous and easier to work with—basically it soaks up your marinade better for a more crispy and chewy texture. I thaw the tofu overnight, drain, and then use the press for about an hour. The result is a flat, drained, non-cracked tofu loaf ready for cooking! What I like about this unit is that it's not messy. The water drains into a separate tub, so all you have to do is pour it out. My only gripe is that this unit incorporates thick rubber bands to apply the pressure. I've had it snap on my fingers a couple times, and it's difficult to use especially when I have my nails long. I'm just worried about the longevity of the equipment since it's a pricey piece of plastic. Other than that, I'm very happy with the convenience of this tofu press, and I hope it lasts a very long time.
