Like other reviewers I make Seitan with this. This is my favorite high protein vegan meal and Anthony's Vital Wheat Gluten is perfect for making it.
I figured I'd post my recipe for those that don't know what to do with it or don't want to mess with more complicated recipes you can find on line.
You need:
4 cups of gluten
1 cup flax seed
1/2 bottle montreal steak seasoning + 1 tblsp
1 splash soy sauce (optional)
3 cups water
Start a large pot of water (big soup pot, not a 4 quart sauce pan) heating to a boil. Add the tblsp of seasoning and a splash of soy.
In a large mixing bowl combine the dry ingredients and mix well. Stir in the 3 cups water until things get pretty doughy. Kneed the mix until it it's solid enough to cut with a sharp knife. You may need to add more gluten to get it solid enough. On a plastic cutting board or other relatively non-stick surface roll the loaf out into a tube about the diameter of a small burger. Cut into 1/4 inch patties and boil for an hour. This is "raw" seitan at this point as in a raw ingredient. You can eat it like it is, but it's only have as good as it could be.
To make it tasty fry patties in olive oil like you would a burger or baste with oil and grill. Serve on toast or a bun like you would a burger, but try it before you go adding ketchup and mustard - you probably won't want to. You can store in the fridge for a week no problem. I can't say if it will last longer as a batch has never lasted longer than that in my house.
