Is it pasta? No. Is it tasty and texturally pleasing? Most Definitely!
I should preface this review by saying I'm a big fan of hearts of palm. I can eat them right out of a jar. So this product intrigued me from the start. And given realistic expectations, it did not disappoint. I created a tasty "pasta" dish using these noodles, some quality jarred tomato sauce, and vegan sausage. I rinsed the noodles well, but I did not soak them in milk (as they suggest to get rid of the palm taste). I like the palm taste and really, once you add other ingredients to your dish, the taste moves way to the background.
As you can see from the photos, they are the shape of linguine, however, each piece is only about 4 inches long. They remain firm, giving something close to a pasta al dente feel in your mouth. And sauce sticks to them. I found them more tasty than say zucchini noodles, but not as tasty as lentil or garbanzo bean noodles.
Hearts of palm are basically water, so if you want some real nutritional value you're going to have to add a protein and some good fats, like I did with the vegan sausage. In this context, they are an excellent wheat pasta substitute.
They are however, expensive. Each package is maybe 2 servings if the pasta is not the main. For me, it was one big serving.
