Probably the best
I bought 4 brands of agar from Amazon and compared them side-by-side. To 1 cup of 50% apple juice (1/2 cup of juice + ½ cup of water) I added 1 teaspoon of agar. Then I heated it almost to boiling, stirred and let cool down to room temperature. “Hardness” is how hard the product is. The harder the better, meaning you have to use less amount of agar to achieve same results. “Taste” means taste. Ideally agar should have no taste at all, so it won’t change the flavor of your dish. Hardness and taste are rated on scale from 1 to 5, with 1 is the worst and 5 is the best. Here’re the results:
