Too much soy!
I'm extremely disappointed in this cookbook! While the pictures are awesome (and pictures are a cookbook MUST in my opinion), a whopping 66 out of the 155 recipes (43%) contain a soy product (mainly tofu). Of the Entrees, 63% contain soy. We do not eat soy-products because they're so highly processed. Some of the recipes can be made without the soy product (e.g. make the tacos without the "vegan sour cream") but others use tofu/soy as a main ingredient, making modification difficult or impossible. To break it down, here are the numbers by category: 6/16 breakfast/brunch recipes contain soy (38%) 1/8 breads 2/6 snacks/appetizers 2/8 dips/spreads 6/13 salads (46%) 11/17 sauces, marinades, dressings (65%) 8/12 sandwiches, burgers, wraps (67%) 22/35 entrees (63%) 0/10 side dishes 2/10 soups, stews 1/12 desserts and sweets You would think with a name "PlantPure" there would be less use of highly processed products. While there is a distinctive LACK of oils (also very highly processed) the author doesn't seem to think tofu also fits into the highly-processed category. The author doesn't use oils because they offer no nutritional value, but I suggest anything that's highly processed is inferior to it's whole-food counterparts. I would NOT recommend this cookbook to people who are looking for a whole-foods, plant-based diet.
